Not So Serious Monday: Mom’s Perfect Pecan Pie

As I have stated here many times before, I am a novice cook.  But the one thing that I have been baking each fall for several years is pecan pie.  So over the weekend, I dug out my mom’s recipe, brewed a cup of tea, and went to work.

Pecan pie is super simple to make.  All you need is sugar, syrup, butter, eggs, premium quality pecans, and a 9 inch pie crust.

In order to have a PERFECT pecan pie, you need to know two secrets that my mom shared with me.

First, inspect each pecan half.  If there is any part of the shell left in the pecan, don’t use it.

Here is what I am talking about:

I broke this pecan half to show you the little sliver of brownish-reddish shell that was still attached.  This tastes bitter.  If you cannot remove it, then do not use that pecan.

The second secret is that in order for the pecan pie to LOOK it’s best, you need to use unbroken halves.  Once the filling is made and poured into shell, flip the pecans so that all of them are right side up.  I know, this sounds silly and I rolled my eyes when my mom told me to do this, but there is no denying that it makes for a prettier pie.

My oven will burn the pie, so, with about ten minutes of cooking time remaining, I place a piece of aluminum foil over the pie to protect it.

When the filling is set, the pie is done.  Remove it from the oven and cool on a rack.

Perfect!

 The Perfect Pecan Pie Recipe:

Ingredients

3 eggs, well beaten
1 cup sugar
1/2 cup butter, melted
1/2 cup dark corn syrup
1 cup pecans
1 unbaked 9 inch pie shell

Directions

Pre-heat oven to 400 degrees. Combine the first five ingredients in order given.  Pour into uncooked shell. Bake in 400 degree oven for 10 minutes.  Then reduce heat to 350.  Continue baking for another 30-35 minutes or until the filling is set. Cool on a wire rack.
